No longer dominated by wine, carefully crafted and selected juices are finally finding their place in the art of food pairing. 

Owner and Manager of Jafa Café  in Auckland’s suburb of Grey Lynn, Raj Ramakrishnan, worked closely with his team of chefs to pair some of their signature (and new) dishes with MOST, a new range of still and sparkling organic juices crafted from organic fruit, the best ingredients and an underlying philosophy that you get out what you put in. 

Raj talks to us about finding that perfect pair. 

Are there any hard and fast rules when it comes to food and juice pairing or is it more of an intuitive process?
There are no hard and fast rules when it comes to pairing food and juices. The broader your palate is for flavours the easier it is to find different flavours to complement one another –in that way it can become an intuitive process.

Many people would be familiar with food and wine pairing, but not so much food and juice. How would you liken the two processes?
It is basically a thought process of working out the notable flavours in each juice, as you would with wine, and trying different foods to either balance or contrast with those notable flavours. 

Can you share with us your top tips for a great pairing? 

1. Don't be afraid to experiment
2. Be patient
3. Trust your senses. Sometimes a combination can look really good on paper, but you can’t know unless you try it!

As far as flavours go; blackcurrant, raspberry and blueberry flavours go well with salads, chicken, lamb and beef; apple, peach, feijoa and mango blend well with shellfish, risotto, white fish and grilled or smoked vegetables; orange pairs best with bread, salads, fruit, duck and mussels.

Has working with MOST inspired any new recipes?
It definitely got us experimenting with some new foods, but we haven’t changed our menu just yet!

Tell us about your favourite pairings from the range and why they work well together?
My favourite from the MOST range is Apple, Orange & Mango, which pairs beautifully with the Jafa Raw Energy Salad with Grilled Tiger Prawns.
