  • 2 cup sugar
  • 2 cup all-purpose flour
  • 1 cup Coca-Cola
  • 1.5 cup tiny marshmallows
  • 0.5 cup butter or margarine
  • 0.5 cup vegetable oil
  • 3 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 0.5 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

  1. Preheat oven to 180 degrees celsius.
  2. In a bowl, sift the sugar and flour. Add marshmallows.
  3. In a saucepan, mix the butter, oil, cocoa and Coca-Cola.
  4. Bring to a boil and pour over dry ingredients; blend well.
  5. Dissolve baking soda in buttermilk just before adding to batter along with eggs and vanilla extract, mixing well.
  6. Pour into a well-greased 23x33cm pan and bake 35 to 45 minutes.
  7. Remove from oven and frost immediately.

Coca-Cola Cake Frosting

To make frosting, combine 1/2 cup butter, 3 tablespoons cocoa and 6 tablespoons of Coca-Cola in a saucepan.

Bring to a boil and pour over 450gm icing sugar, blending well. Add 1 teaspon of vanilla extract and 1 cup of chopped pecans.

Spread over hot cake. When cool, cut into squares and serve.
